This New NYC Bakery Uses AI To Bake Their Bread

We’ve seen AI being used for many things, such as tracking fare evasion on the NYC subway and predicting what things would look like in the future, but one thing we haven’t seen it do–be used to make…sourdough?!

Yes, sourdough.

Boogie Lab, a Croatian food tech trailblazer and craft bakery, recently announced that Boogie Bakery, their first US-based micro bakery, will be heading to NYC this spring (2024).

Founded by Karlo Vulin and Mladen Vidović, Boogie Lab quickly gained popularity across Europe for its unique approach to sourdough fermentation.

That unique approach, and to clarify on the “food tech trailblazer” aspect, the company not only uses traditional techniques for sourdough fermentation, but also AI.

According to a press release, AI fermentation technology incorporates smart fermentors and sensors and provides precise control over the baking process, which results in consistently perfect sourdough loaves. Boogie Bakery will be the first bakery in North America to use this AI fermentation technology.

The company says that not only does the bread taste better and have a better texture, but it also lasts longer and won’t hurt your stomach or bloat you because it’s fermented with wild yeasts and additives are never used.

Boogie Lab’s North America expansion was spearheaded by Dennis Turcinovic, the co-owner of NYC’s legendary Delmonico’s Steakhouse (who’s opening a sister trattoria this March!)

As co-founder of Boogie Lab USA, Turcinovic will oversee all US operations including the opening of Boogie Bakery.

Turcinovic stated:

The bakery will open next to Delmonico’s Steakhouse at 48 Beaver Street in the spring. It will offer a selection of sourdough-based breads, pastries, and sandwiches.
